β-胡萝卜素的抗氧化作用机制Anti-Oxidant Mechanism of Beta Carotene

摘要(Abstract):
实际生产中,氧化应激会对畜禽产生免疫抑制、减缓生长、降低生产性能以及脏器损伤等不良影响,从而降低畜牧生产的经济效益。β-胡萝卜素具有抗氧化、提高机体免疫活性、调控糖脂代谢等功能,其抗氧化功能是通过抑制脂质氧化和促进细胞抗氧化防御系统发挥功能来减轻氧化应激引起的器官损伤,是一种待开发的、理想的功能性饲料抗氧化添加剂。文中对β-胡萝卜素的结构、种类和来源及其代谢做了简要概述,并对其抗氧化的作用机制以及在畜禽及经济动物生产上的应用进行了综述。
